RECIPE ~ VANILLA CUPCAKE WITH CHOCOLATE FROSTING


Just realised my last post was nearly 2 months ago!! How time flies and it's nearly Easter already!

This year for Easter, I'm planning to decorate some eggs with my son and eat loads of chocolate lol

Anyway, this post is just going to be a quick recipe for some vanilla cupcakes that I made recently. They were much better than expected so I thought I'd share the recipe with you guys as it's so easy to make. I made it with chocolate frosting to go with the Easter theme but you can finish it off with anything like lemon icing or a dusting of icing sugar.


INGREDIENTS:
320g Cake Flour
250g Caster sugar
170g Butter
2 Eggs

2 tsp Vanilla Essence
2.5 tsp Baking powder
1/4 tsp Salt
300ml Milk

Chocolate frosting:
76g Butter
85g Cocoa
340g Icing sugar
80ml Milk
1 tsp Vanilla essence

DIRECTIONS:
1. Preheat the oven to 190°C and line the cupcake pan with paper cases.

2. Beat the butter until it is smooth and then add sugar and continue to whisk until well mixed.

3. Add the eggs one by one and continue to whisk until light and fluffy.

4. Add the vanilla essence, baking powder, salt, flour and milk and mix until the batter is smooth.
(I mixed in all the dry ingredients first and then added the milk in intervals until the batter was smooth with no lumps)

5. Pour the mixture into the cases until 2/3 full and bake for 15mins or until golden brown.

6. Frosting: Melt the butter in a pan over low heat. Add cocoa and mix until mixture is thick and smooth. Transfer into a bowl and let it cool.

7. Add vanilla, milk and icing sugar alternately and whisk until the consistency you require. If the frosting is too runny, you can add more icing sugar to thicken it.

8. Decorate your cupcakes and voila!
